oh that has unearthed an unhappy memory....... clutch plate in backwards?
the fat side with the cush-drive springs should always face away from the flywheel
see picture, that shows the correct way.. see the bit where his hand is...if you put that side facing the flywheel bolts in some cases it will bolt up fine and work, BUT the springs rub the bolt heads.....
this means often when you are on the clutch, the disc still spins along with the flywheel as the springs in the centre of the plate are pinging off the bolt heads
and then its a lot of hard work to get into gear
don't ask how i know....

long time ago but the air was blue as soon as i started it......
anyway this may well explain why you could have the rear wheels in the air. sit in the car with it running in gear and with your clutch flat to the floor and still have considerable drive to the rear wheels.
bet you had to nearly push the peddle through the floor..... with it the right way you won't, the bite point is about 1.5 inches of travel normally, not the full throw of the peddle
also if you put it in the wrong way, the spline hub is also too far towards the end of the input shaft.. you won't have full spline coverage as the front will be hanging over into the taper
if its always been in backwards its a potential cause of all of your concerns
