sounds like its going into a massive lean spot when you hit the gas
works at idle and into progression but falls on its ass when you hit the gas??
accelerator pump or rods or springs
i.e once the vacuum decreases as the throttle opens its doing 1 or 2 things
its staying on the fat bit of the rod cos the springs are too light weight and rods are still pulled down by weak vaccum keeping it in idle and progression when it should be on full power mode
or if the spring is forcing the rod to move up so the rod thin section is in the jet maybe its not thin enough.
however the first thing I'd do is look at the linkage that connects the main throttle arm to the accelerator pump
it usually has 2 or 3 holes to put it in and often at both ends on the accelerator pump lever and on the throttle lever
I'd set it up for the biggest push on the accelerator pump possible...i.e longest throw.
if you end up with similar problem but puffs of smoke out the tail pipe back it off a bit adjust 1 end for less pump travel.
I will admit to not being the best with edelbrock carbs I can manage a carter BBD (similar but tiny and less involved) adrain worman is quite handy with them
