We use a place in Essex - probably a bit far for you - I can get you the details if you need them.

sanspeed bexley heath did my webers you want "Mr" rather than "son" the older chap does carbs son does ECUs

but you need to say

Drivability or all out power before you start or book a double session

yes have use sanspeed before for the escort/ sierra's, the father knows his stuff on webbers don't think he's up on the holley stuff, have heard of atspeed but not used em, Essex not far for me pete, I always used the 2 steves at track & road for all the race cars and mounttune used em for the rouse stuff,
car needs setting up for more drivability as done away with the double pumper and reconfigured the dizzy replaced the 3" exhaust system, the thing has got a bit of a hairy cam as the previous guy used to street strip it so stonks on with pedal to the metal but runs to rich low down and starts to foul plugs up, have put warmer plugs in as well, probably needs a mappable ignition set up to get it write but again never used one on a holley carbed v8

Yes, it sounds like the place we use.

I am proud of the fact that every baseline setting I have put into a Holley has needed no further adjustment on the rolling road!!

Customers DO love a printout though....

My Bosses 427 sbc has a Dominator on it and a mappable Ignition system, and I definitely think that is the way to go - I mapped it (with some guidelines from a person who knows a LOT more than I do!!) and it works a treat.

This is a circuit car, 650bhp on the dyno, but will run for an hour flat out....
