How the hell do you get them out? The rods move a bit but it's like theres some sort of clip holding them in or do I just apply a bit more brute force?

If they are anything like the bench seat i had on my duster, they are held in place inside the seat frame.
I Think its these big orange/yellow blocks that stop the head rest from coming completely off. When i took mine apart i had to unscrew a bunch of pieces from inside the seat frame before the head rests actually came out
Hmm, I had the back of the seat off and there's nothing to see or feel, any clip would have to be buried inside the seat foam which seems a little crazy...

I'm retrimming the seats but I've only got one headrest. I like the headrests but the cost of them and parts for them is crazy, so I'll probably leave them off for now.

Brute force still wasn't doing it. I tried poking a couple of stout cable ties down into the seat hoping that would hold back the clips, that did it, headrest came off without much effort, thanks chaps!
