Ref gunk - thats not a huge build up. A few months of damp would cause that - get some heat cycles through it before getting too worried.
Fi-tech - they need to learn. And to learn they need to monitor. And to monitor they need to have some 'normal' run cycles.
You are in a bit of a vicious circle. Get the car starting , get some heat cycles, see if the gunk clears, let the fitech learn and settle. You are on the way...
